SCA FOUNDATION program

The SCA Foundation Camp covers the entire training process of the supply chain, guaranteeing an excellent basis for optimizing its activities in the coffee sector, and above all for obtaining all the SCA certificates recognized worldwide in a single solution!

  • Day 1 — GREEN COFFEE: An introductory course that deepens all the key concepts concerning green coffee, from the cultivation of the plant to the arrival in roasting. This module has been designed for those who approach the world of green coffee for the first time.
  • Day 2 — ROASTING: This module provides basic information to understand the functioning of the roasting cycle and how the sensory aspects of coffee change through a light or dark roasting. Experience is not required.
  • Day 3 — SENSORY SKILLS: A course designed to learn the basics of coffee sensory evaluation, which consists of both a part of practical exercises and a theoretical part focused on the world of taste and aroma. The course, designed to learn to perceive the different tasting notes in a dynamic and interactive way, provides the key information to take the basic exam of the SCA Sensory Skills module.
  • Day 4 — BREWING: The brewing course offers practical learning on grinding profiles and coffee extraction methods.
  • Day 5 — BARISTA SKILLS: The aim of this course is to provide basic techniques to those who approach the world of coffee for the first time. Students will learn to distinguish Arabica coffee from Canephora coffee, to use the coffee grinder-doser, to make espresso coffee and to whip the best milk for cappuccino. The program also deals with the daily cleaning of the equipment and the organization of the workspace. It is not necessary to have experience in the sector.

The coffee break, the use of equipment and the consumables necessary for the course are included in the price.

Marco BAZZARA

As director of the Bazzara Academy, Marco specializes in sensory analysis. In addition to having obtained the AST Specialty Coffee Association License for all the modules of the Coffee Skills Program, he has in fact deepened what concerns sensorial practice, together with distinguished experts of international fame; Wine Sommelier, Idrosommelier, Tea Sommelier and Tea Trader, Espresso and Coffee Sommelier, Honey Taster, Chocolate Taster, Grappa and brandy taster.
